My sister in law made a version of this and I wanted to make my own so this is what I came up with

  • 2 lb
    pot roast, trimmed
  • 1/2 Tbsp
    olive oil
  • 1 Tbsp
  • 1 1/2 clove
    garlic (minced)
  • 1/3 c
    chopped onions
  • 1 dash(es)
  • 1/2 tsp
  • 1/2 tsp
  • 2 Tbsp
    minced parsley
  • 1/3 c
    beef broth
  • 1 1/2 Tbsp
    dry vermouth
  • 6 oz
    canned tomato sauce

How to Make Italian pot roast


  1. Heat the oil and butter in a pan. Place roast, garlic, and onions in the oil and butter and cook until brown on all sides, approximately 10 minutes.
  2. Season with the salt, pepper, and rosemary, and then add the parsley, beef broth, vermouth, and tomato sauce.
  3. Cover and bake in a 350 degree oven for 2 1/2 to 3 hours until meat is tender.
