My sister in law made a version of this and I wanted to make my own so this is what I came up with

Ingredients

  • 2 pounds pot roast, trimmed
  • 1/2 tablespoon olive oil
  • 1 tablespoon butter
  • 1 1/2 cloves garlic (minced)
  • 1/3 cup chopped onions
  • 1 dash salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon rosemary
  • 2 tablespoons minced parsley
  • 1/3 cup beef broth
  • 1 1/2 tablespoons dry vermouth
  • 6 ounces canned tomato sauce

How To Make italian pot roast

  • Step 1
    Heat the oil and butter in a pan. Place roast, garlic, and onions in the oil and butter and cook until brown on all sides, approximately 10 minutes.
  • Step 2
    Season with the salt, pepper, and rosemary, and then add the parsley, beef broth, vermouth, and tomato sauce.
  • Step 3
    Cover and bake in a 350 degree oven for 2 1/2 to 3 hours until meat is tender.
