This is an easy, one-pot meal. Great meal for week-night dinner.

Ingredients

  • 1 pound lean ground beef
  • 1 cup onion, chopped
  • 1 cup celery, chopped
  • 1 - bell pepper, de-seeded and cubed
  • 1 can (28 oz) diced tomatoes, do not drain
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 cup frozen peas
  • 2 small carrots, diced
  • 1 cup uncooked rice
  • 1 1/2 cups water or vegetable broth
  • 1 teaspoon minced garlic

How To Make healthy beef skillet

  • Step 1
    Brown the ground beef in a skillet and drain off any excess fat.
  • Step 2
    Add the remaining ingredients and mix well.
  • Step 3
    Cover and cook over medium heat until boiling.
  • Step 4
    Reduce the heat to low and simmer for 35 minutes. Serve hot.
