Ingredients

  • 2-3 pounds flat cut corned beef (with spice package)
  • 1 pound baby red or white potatoes (tiny ones, or quarter larger ones)
  • 1/2 pound peeled baby carrots
  • 2 cloves garlic, peeled and halved
  • 1 bay leaf
  • 1 bottle (12 oz) guinness stout
  • 1/2 head green cabbage, optional (see note)

How To Make guinness corned beef (slow cooker)

  • Step 1
    Coat slow cooker liner with non-stick cooking spray. Place corned beef in slow cooker. Sprinkle contents of seasoning packet over meat.
  • Step 2
    Add potatoes, carrots, garlic and bay leaf on top of meat. Pour the beer over all.
  • Step 3
    Cover slow cooker and cook on low for 8 hours.
  • Step 4
    When cook time is done, remove meat to cutting board Slice against grain to serve. Serve with vegies.
  • Step 5
    NOTE: If you want cabbage, it can be cooked separately on stove top (my preferred method) or added in slices to the slow cooker during the last 10-60 minutes of cook time.
