Ingredients
- 2-3 pounds flat cut corned beef (with spice package)
- 1 pound baby red or white potatoes (tiny ones, or quarter larger ones)
- 1/2 pound peeled baby carrots
- 2 cloves garlic, peeled and halved
- 1 bay leaf
- 1 bottle (12 oz) guinness stout
- 1/2 head green cabbage, optional (see note)
How To Make guinness corned beef (slow cooker)

Step 1Coat slow cooker liner with non-stick cooking spray. Place corned beef in slow cooker. Sprinkle contents of seasoning packet over meat.

Step 2Add potatoes, carrots, garlic and bay leaf on top of meat. Pour the beer over all.

Step 3Cover slow cooker and cook on low for 8 hours.

Step 4When cook time is done, remove meat to cutting board Slice against grain to serve. Serve with vegies.

Step 5NOTE: If you want cabbage, it can be cooked separately on stove top (my preferred method) or added in slices to the slow cooker during the last 10-60 minutes of cook time.
