Notes from the Test Kitchen:
Wrapping a burger in lettuce is a great alternative for a bun if cooking gluten-free, but it also lightens up the overall burger. There is no lack of flavor here. Incorporating green onions into the meat adds a bit of texture and a hint of onion flavor. The mashed avocado and bacon bits "butter" really makes the burger. It's creamy, crunchy and the perfect topping to add a punch of flavor.

12 oz
80/20 ground beef
1 tsp
1 tsp
black pepper
1/4 c
sliced green onions, green and white parts separate
6 slice
thick cut bacon
1/2 large
more salt and pepper to taste
2 large leaves green leaf lettuce

1Cook bacon over medium heat until crisp, set aside. Remove all but 1 teaspoon of the fat.
2Mix the ground beef, salt, pepper, and the green parts of the onions until well mixed.
3Divide in half and shape into two patties.
4Cook burgers until well done.
5In the meantime, mash the avocado. Crumble the bacon, and add to the avocado along with the white part of the onions. Season with salt and pepper to taste.
6Once burgers are well done, remove from pan, and spread with the bacon avocado butter, and wrap in the lettuce leaves.
