Ingredients

  • 1 lb
    beef stew meat
  • 2 Tbsp
    oil
  • 2 Tbsp
    fajita seasoning
  • 1/2
    onion
  • 1/2
    orange bell pepper
  • 1/2
    yellow bell pepper
  • 2
    pablano peppers
  • 12 oz
    canned green chili
  • 2 medium
    zucchini

How to Make Green Chili Beef Stew

Step-by-Step

  1. Heat oil in a Dutch oven. I used coconut oil but you could use whatever you have handy. Sprinkle the meat with the fajita seasoning. Brown meat in batches. I did 3 batches. If you brown it all at once, it doesn't really brown.
  2. Once all the meat is browned, return it to the pan.
  3. Add sliced onion, bell pepper, diced pablano peppers, zucchini, and the canned chili peppers.
  4. Turn up to medium-high for about 10 minutes to get it going. Then reduce the heat to low and simmer for about 2 hours or until meat is tender.
