green chili beef stew

I wanted something with a Mexican flair. I had all this in my fridge, so here we go.

Ingredients

  • 1 pound beef stew meat
  • 2 tablespoons oil
  • 2 tablespoons fajita seasoning
  • 1/2 - onion
  • 1/2 - orange bell pepper
  • 1/2 - yellow bell pepper
  • 2 - pablano peppers
  • 12 ounces canned green chili
  • 2 medium zucchini

How To Make green chili beef stew

  • Step 1
    Heat oil in a Dutch oven. I used coconut oil but you could use whatever you have handy. Sprinkle the meat with the fajita seasoning. Brown meat in batches. I did 3 batches. If you brown it all at once, it doesn't really brown.
  • Step 2
    Once all the meat is browned, return it to the pan.
  • Step 3
    Add sliced onion, bell pepper, diced pablano peppers, zucchini, and the canned chili peppers.
  • Step 4
    Turn up to medium-high for about 10 minutes to get it going. Then reduce the heat to low and simmer for about 2 hours or until meat is tender.
