great meat loaf

Meat loaf is always good as a meal with potatoes. I use some of the left overs in a cold sandwich or in a hot meat loaf sandwich with mashed potatoes and gravy.

Ingredients For great meat loaf

  • 1 lb
    lean ground beef
  • 1 lb
    ground pork
  • 1 c
    old fashioned oat meal
  • 3/4 can
    tomato soup
  • 1/4
    sweet pepper
  • 1 sm
  • 1/2 c
    raisins or cranberries
  • 1
    large or jumbo egg
  • 1 Tbsp
    light corn syrup
  • 1/4 tsp
  • 1 Tbsp
  • salt pepper to suit
  • 1 Tbsp
    brown sugar

How To Make great meat loaf

    in a large bowl add all ingredients except basil and brown sugar, mix thoroughly. Place in a load pan (I use a grease separating pan). Use the last 1/4 of the tomato soup and brown sugar mixed together and cover loaf, sprinkle with basil.

    cook in a preheated 375'F oven for 1 hour.

    I use Dei Fratelli tomato soup because it is glutton free. You can use tomato paste instead or use catsup without the corn syrup or cinnamon. I often add some green chilies or a can of drained Ro*Tel for a spicy loaf.
