grandma sokol's stuffed peppers

This is one of my family's favorite dishes of all time. Other than the cooking method used and the addition of a little brown sugar, it happens to be one recipe that I have not altered from the original. It was given to me by my grandma who is one of the greatest cooks I have ever known! Enjoy!

Ingredients
- 1 pound ground beef (lean)
- 1/2 cup rice (cooked)
- 1 medium onion (chopped)
- 6 slices bacon (chopped)
- 3/4 cup ketchup
- 1 teaspoon celery seed
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 can tomato soup
- 1 can tomatoes (chopped), or equivalent fresh tomatoes
- 1 tablespoon brown sugar
How To Make grandma sokol's stuffed peppers

Step 1Clean and core about 6 peppers. Cut off tops, about 1/2 inch down and chop the ring in small pieces.

Step 2Fry bacon until brown and drain. Add onion, chopped pepper rings, ketchup, celery seed, salt and pepper. Simmer until onions and peppers are limp.

Step 3Add to ground beef and rice and mix. Fill peppers 3/4 full and place in 9x13 inch baking pan.

Step 4Combine tomato soup (mixed with 1 can of water) and tomatoes. Pour over filled peppers. Sprinkle with brown sugar.

Step 5Bake at 375 degrees for about 45 minutes covered loosely with foil. The last 15 minutes, remove foil and bake until top of peppers is lightly browned and carmelized.
