gardener's lasagna

I have been making this recipe since the early 80's. It's a good light, but filling zucchini lasagna. Try it and let me know how you like it. :)

Ingredients
- 1 3/4 pounds zucchini, sliced thin lengthwise
- 1 pound ground beef
- 1 clove garlic, minced
- 8 ounces can tomato sauce 1 to 2 cans
- 1 teaspoon salt
- 2 teaspoons italian seasoning
- 1 cup small curd or low fat cottage cheese
- 1 - egg, beaten
- 1 tablespoon parsley
- 1/2 cup parmesan cheese
- 2 cups mozzarella cheese, grated
- 1/4 cup bread crumbs
How To Make gardener's lasagna

Step 1Brown ground beef with garlic until cooked through. Drain off excess fat. Stir in tomato sauce, salt and Italian seasoning.

Step 2Mix together cottage cheese, beaten egg and parsley. Set aside.

Step 3Use a 11 3/4 x 7 1/2 x 1 3/4 inch baking dish. Alternate layers of sliced zucchini, cottage cheese mixture, ground beef, Parmesan cheese, mozzarella cheese and bread crumbs. Repeat till all ingredients are gone. Make 350°F for 45 minutes to 1 hour.
