I have been making this recipe since the early 80's. It's a good light, but filling zucchini lasagna. Try it and let me know how you like it. :)

1 3/4 lb
zucchini, sliced thin lengthwise
1 lb
ground beef
1 clove
garlic, minced
8 oz
can tomato sauce 1 to 2 cans
1 tsp
2 tsp
italian seasoning
1 c
small curd or low fat cottage cheese
egg, beaten
1 Tbsp
1/2 c
parmesan cheese
2 c
mozzarella cheese, grated
1/4 c
bread crumbs

How to Make Gardener's Lasagna


  • 1Brown ground beef with garlic until cooked through.
    Drain off excess fat.
    Stir in tomato sauce, salt and Italian seasoning.
  • 2Mix together cottage cheese, beaten egg and parsley.
    Set aside.
  • 3Use a 11 3/4 x 7 1/2 x 1 3/4 inch baking dish.

    Alternate layers of sliced zucchini, cottage cheese mixture, ground beef, Parmesan cheese, mozzarella cheese and bread crumbs.

    Repeat till all ingredients are gone.

    Make 350°F for 45 minutes to 1 hour.
