Ingredients

  • 2 tablespoons lemon juice
  • 2 teaspoons unsalted butter
  • 1/4 cup chicken stock
  • 1 - red bell pepper seeded and cut into strips
  • 1 pound lean beef strips
  • 9 ounces snow peas, thawed if frozen
  • 1 1/2 pounds fresh asparagus, ends trimmed, cut into 2 in. pieces
  • 1/4 cup peanuts, chopped

How To Make fresh asparagus and beef stir-fry

  • Step 1
    Melt butter in a heavy nonstick skillet or a wok over medium high heat.
  • Step 2
    Sauté bell pepper, beef, snow peas and asparagus 4-5 minutes.
  • Step 3
    Add stock and cook another 2 minutes or until vegetables are tender and liquid has evaporated.
  • Step 4
    Remove from heat and stir in lemon juice.
  • Step 5
    Season with salt and pepper to taste.
  • Step 6
    Serve sprinkled with peanuts.
