four fabulous fajita sammies

The challenge for this week 1/31/12 in Sherri's Sandwich group was a sammie with al ingredients beginning with the letter "F". This wa what I came up with and I have to say it was very freekin' fantastic. My family are leary of some of my experiements comming from the kitchen..but 95% of the time they are pleasantly surprised. Enjoy!

Ingredients

  • 1 pound flank steak, thinly sliced
  • 1 tablespoon evoo, 1 for the meat marinade and 3 to stir fry with
  • 1/3 cup frasinetti wine ( a local winery since 1897)
  • 1 package taco bell fajita seasoning mix
  • 1 - 12 oz packages frozen fajita veggies (red, green & yellow peppers & onions)
  • 1 - 4 oz cans fire roasted green chilis, diced
  • 1 - 8 oz packages queso fresco cheese, crumbled
  • 4 - french rolls, split

How To Make four fabulous fajita sammies

  • Step 1
    Mix the fajita mix with 1 TBL of the evoo and wine. Marinate the steak for a couple of hours. Split the rolls and bake in oven for a few minutes. Divide the fresco cheese between the 8 1/2's of the rolls. Bake a few minutes longer until the cheese has melted. I did this while the meat & veggies were cooking so everything was done about the same time. Heat oil in wok and stir fry the meat until almost done. Add frozen fajita veggies and chilis. Stir fry for a few minutes until done. Divide the fajita mixture evenly on the 4 rolls.
  • Step 2
    Enjoy with a glass of Frasanetti wine(or one or your choice(... yummy! Frasinetti Winery has been in Sacramento since 1897. I have done several wedding cakes at their vinyard & restaurant. The owner always liked my cakes and gave me a bottle of wine every time I delivered one there. : )
