Filet Essentials: Pan-Seared Beef Filet

A quick sear in a hot, skillet is all you need for an elegant repast. To me this dish is all about flavor, and it’s all about presentation.

I love to serve this recipe with some garlic mash potatoes, a nice sauce, some matchstick carrots on top, and if you you’re being decadent, maybe a knob of herb butter.

So, you ready… Let’s get into the kitchen.

  • 1 medium
    filet, about 1.5 inches (3.8cm).
  • ·
    salt, kosher variety, to taste
  • ·
    black pepper, rough grind, to taste
  • 1 Tbsp
    sweet butter, unsalted
  • 1 Tbsp

  • ·
    herb butter, for topping
  • ·
    matchstick carrots
  • ·
    garlic mash potatoes

How to Make Filet Essentials: Pan-Seared Beef Filet


  2. Gather your Ingredients (mise en place).
  3. Place a rack in the middle position, and preheat the oven to 425f (220c).
  4. Sprinkle the filet with salt and pepper.
  5. Add the oil and butter to an ovenproof skillet over medium-high heat.
  6. When the butter melts, and the foaming subsides, add the filet.
  7. Sear about two minutes per side.
  8. Place the skillet into the preheated oven, for 5 minutes.
  9. Remove from the oven, and allow to cool for five minutes.
  11. Serve with some garlic mash potatoes, and maybe a veggie. Enjoy.
  12. Chef’s Note: When I’m doing filets, I avoid putting cheese or other ingredients into my mash potatoes; just some baked garlic, salt, pepper and milk. I don’t want the side dishes to overpower the taste of that wonderful filet.
  13. Keep the faith, and keep cooking.
