feiny's everything steak & bacon hash

This hash is great for dinner. I used my friend Chef Adam Feinberg's Everything Rub to create this recipe. His rubs are 2DIE4. Ingredients

  • 1 pound top sirloin steak, cut in chunks
  • 2 tablespoons feiny's everything rub, divided
  • 2 tablespoons scallion olive oil
  • - salt to taste
  • 3-4 slices bacon, chopped
  • 1 small onion, chopped
  • 1/4 cup colorful bell peppers, chopped
  • 3 - garlic cloves, minced
  • 3/4 pound medley fingerling potatoes, cut and boiled for 4-5 mins.
  • 2 tablespoons italian parsley, chopped & divided
  • 1/2 teaspoon red pepper flakes
  • 12 - grape tomatoes, quartered
  • 4 - sunny-side up eggs-or favorite

How To Make feiny's everything steak & bacon hash

  • Step 1
    Combine steak, 1/2 of the rub, oil & salt to a mixing bowl. Mix well and marinate for 15 minutes.
  • Step 2
    Meanwhile, heat a large skillet to medium-high heat add bacon pieces and fry for 5 minutes or until bacon is crispy. Remove bacon and set aside
  • Step 3
    Toss in onion, peppers, garlic and cook for 5 minutes. Add potatoes and remaining rub and 3/4 parsley; cook for 10-12 minutes turning a few times until potatoes are golden brown. Remove veggies from skillet and set aside.
  • Step 4
    In the same skillet, sear steak chunks for 2 minutes on each side. Add bacon, potatoes & veggies back to skillet cook for an additional 2-3 minutes.
  • Step 5
    Plate up. Add tomatoes. Top with egg and garnish with parsley and a pinch of rub.
