ellen's roast beef hash
This recipe is made up of leftovers and it's more yummy that way than with fresh ingredients. This is the way my mother made it.

Ingredients
- 2 cups leftover roast beef, shredded
- 2 cups leftover roasted potatoes, cubed
- 1 cup leftover cooked carrots, diced
- 1/2 cup onion, chopped
- 1/2 cup green pepper, chopped (optional)
- 1 tablespoon butter
How To Make ellen's roast beef hash

Step 1In a large saucepan, combine first three ingredients and heat over low-medium heat.

Step 2In a skillet, saute onion and green pepper (if using) in 1 Tbsp. butter over low-medium heat until tender.

Step 3Add onion/pepper mixture to the saucepan and combine well. Continue cooking until heated through.

Step 4Serve with a green salad and rolls.
