This recipe is made up of leftovers and it's more yummy that way than with fresh ingredients. This is the way my mother made it.

  • 2 c
    leftover roast beef, shredded
  • 2 c
    leftover roasted potatoes, cubed
  • 1 c
    leftover cooked carrots, diced
  • 1/2 c
    onion, chopped
  • 1/2 c
    green pepper, chopped (optional)
  • 1 Tbsp
    butter

How to Make ELLEN'S ROAST BEEF HASH

Step-by-Step

  1. In a large saucepan, combine first three ingredients and heat over low-medium heat.
  2. In a skillet, saute onion and green pepper (if using) in 1 Tbsp. butter over low-medium heat until tender.
  3. Add onion/pepper mixture to the saucepan and combine well. Continue cooking until heated through.
  4. Serve with a green salad and rolls.
