Ingredients
- 1 large eggplant peeled and thinly sliced
- 1 pound lean ground beef or turkey
- 1 jar any brand of spaghetti sauce
- 1 large onion chopped (optional)
- 1 package mozzarella cheese, low-fat
How To Make eggplant lasagna

Step 1Brown beef with onion. Addsauce when meat is done and let simmer a few mins.Coat bottom of an 8x12 casserole dish with sauce, add layer of eggplant, more sauce and cheese. Continue to layer that way until eggplant is gone,ending with a final layer of sauce and cheese. Bake in preheated oven 350* for about 45 mins. or until eggplant is tender. Serve with green salad and french bread.
