easy top of the stove chuck roast

I made this one night when I wanted a roast and didn't have use of my slow cooker. Someone borrowed it and it's till MIA, lol. So I did a stove top roast. Very easy to make.

Ingredients
- 2 tablespoons canola oil
- 3 pounds beef chuck roast, trimmed
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon dried oregano
- 1-1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 large onions, chopped
- 1 - 28 oz can diced tomatoes w/ juice.
How To Make easy top of the stove chuck roast

Step 1In lg pot, over medium heat, heat oil. Brown roast on all sides. Sprinkle w/ onion and garlic powders, oregano, salt and pepper.

Step 2Add onions and tomatoes w/ juice. Reduce heat to low. Cover, simmer for 2-2-1/2 hrs or until tender.
