easy diet-friendly beef tips and gravy

This recipe is so delicious and at only 213 calories per serving, you can enjoy without guilt. I like to serve mine over 1/2 cup of mashed potatoes and a veggie for a great tasting, low calorie meal. It can also be served over rice (my hubby's favorite way), or over noodles. It is so easy, the whole thing is done in your crock pot. You really feel like you're cheating, but you're not! Enjoy!

Ingredients

  • 2 to 2 1/2 pounds stew beef
  • 2 medium onions
  • 2 cups beef broth
  • 2 packages brown gravy mix (dry powder in the envelope)
  • 1 package dry mushroom gravy mix
  • - salt and pepper to taste

How To Make easy diet-friendly beef tips and gravy

  • Step 1
    Cut stew beef into bite sized chunks and trim away any visible fat. Peel and quarter onions.
  • Step 2
    In a bowl or large measuring cup, combine beef broth and gravy mixes.
  • Step 3
    Place all ingredients into a crock pot and cook on high for about an hour. Reduce heat to low and cook about three to four more hours or until meat is tender and gravy has thickened. Serve over rice, noodles or mashed potatoes.
  • Step 4
    NOTE: If gravy appears to be too thin, you may add a little cornstarch mixed with water in the last hour of cooking.
