This is so simple, yet so yummy. I have included a low sodium/fat option as well.

This could also be a vegetarian dish by leaving off the sausage and hamburger.

Ingredients

RICE

2 c
instant brown rice
1 3/4 c
water
15 oz
can of diced tomatoes, no salt added
1 1/2 tsp
cumin
1 tsp
granulated garlic
1/2 tsp
granulated onion
1/2 tsp
black pepper

BEANS

15 oz. cans of red beans, drained and rinsed

SAUSAGE OPTION

1-2 lb
smoked sausage links, sliced

HAMBURGER OPTION-LOWER SODIUM/FAT

1-2 lb
ground round
1 tsp
granulated garlic
1 tsp
granulated onion
1 tsp
cumin
1 tsp
chilli powder
1 tsp
paprika
1/2 tsp
black pepper

How to Make Dos Beans and Rice

Step-by-Step

  • 1RICE: Add water and tomatoes, juice and all to pot, bring to a boil, add rice and spices. Cook per box instructions.
  • 2BEANS: Drain and rinse beans well. Set aside.
  • 3SAUSAGE OPTION:In a large skillet place sausage slices and brown. Add drained and rinsed beans and rice. Stir together well. Remove from heat. Top with salsa or shredded cheese.
  • 4HAMBURGER LOWER SODIUM/FAT OPTION: Scramble up and brown ground beef with seasonings. When beef is fully cooked, add drained and rinsed beans and rice. Stir to mix well. Remove from heat.
