dos beans and rice

This is so simple, yet so yummy. I have included a low sodium/fat option as well. This could also be a vegetarian dish by leaving off the sausage and hamburger.

Ingredients

  • RICE
  • 2 cups instant brown rice
  • 1 3/4 cups water
  • 15 ounces can of diced tomatoes, no salt added
  • 1 1/2 teaspoons cumin
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon granulated onion
  • 1/2 teaspoon black pepper
  • BEANS
  • 2 - 15 oz. cans of red beans, drained and rinsed
  • SAUSAGE OPTION
  • 1-2 pound smoked sausage links, sliced
  • HAMBURGER OPTION-LOWER SODIUM/FAT
  • 1-2 pound ground round
  • 1 teaspoon granulated garlic
  • 1 teaspoon granulated onion
  • 1 teaspoon cumin
  • 1 teaspoon chilli powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper

How To Make dos beans and rice

  • Step 1
    RICE: Add water and tomatoes, juice and all to pot, bring to a boil, add rice and spices. Cook per box instructions.
  • Step 2
    BEANS: Drain and rinse beans well. Set aside.
  • Step 3
    SAUSAGE OPTION:In a large skillet place sausage slices and brown. Add drained and rinsed beans and rice. Stir together well. Remove from heat. Top with salsa or shredded cheese.
  • Step 4
    HAMBURGER LOWER SODIUM/FAT OPTION: Scramble up and brown ground beef with seasonings. When beef is fully cooked, add drained and rinsed beans and rice. Stir to mix well. Remove from heat.
