This is so simple, yet so yummy. I have included a low sodium/fat option as well.

This could also be a vegetarian dish by leaving off the sausage and hamburger.

Ingredients

  • RICE

  • 2 c
    instant brown rice
  • 1 3/4 c
    water
  • 15 oz
    can of diced tomatoes, no salt added
  • 1 1/2 tsp
    cumin
  • 1 tsp
    granulated garlic
  • 1/2 tsp
    granulated onion
  • 1/2 tsp
    black pepper
  • BEANS

  • 2
    15 oz. cans of red beans, drained and rinsed
  • SAUSAGE OPTION

  • 1-2 lb
    smoked sausage links, sliced
  • HAMBURGER OPTION-LOWER SODIUM/FAT

  • 1-2 lb
    ground round
  • 1 tsp
    granulated garlic
  • 1 tsp
    granulated onion
  • 1 tsp
    cumin
  • 1 tsp
    chilli powder
  • 1 tsp
    paprika
  • 1/2 tsp
    black pepper

How to Make Dos Beans and Rice

Step-by-Step

  1. RICE: Add water and tomatoes, juice and all to pot, bring to a boil, add rice and spices. Cook per box instructions.
  2. BEANS: Drain and rinse beans well. Set aside.
  3. SAUSAGE OPTION:In a large skillet place sausage slices and brown. Add drained and rinsed beans and rice. Stir together well. Remove from heat. Top with salsa or shredded cheese.
  4. HAMBURGER LOWER SODIUM/FAT OPTION: Scramble up and brown ground beef with seasonings. When beef is fully cooked, add drained and rinsed beans and rice. Stir to mix well. Remove from heat.
