doggie essentials: hotdog awesome sauce
I have two hotdog chili recipes posted, and both are great on a good doggie. This one is a bit different. I am using three different meats, and a few other new ingredients. Served this on top of some prime hotdogs with Bonnie’s baked french-fries, coleslaw, and some nice tall cold ones. So, you ready… Let’s get into the kitchen.

Ingredients
- THE MEATS
- 1 pound ground beef, lean (80/20)
- 8 ounces ground pork loin
- 4 ounces ground italian sausage, mild or hot, your choice
- THE VEGGIES
- 1 medium yellow onion, finely chopped or grated
- 2 - 3 cloves garlic, minced
- THE DRY SPICES
- 2 - 3 tablespoons chili powder, hot or mild, your choice
- 1 tablespoon dehydrated onions
- 1 teaspoon ground cumin, or to taste
- 1 teaspoon smoked paprika
- 1 teaspoon mustard powder, i prefer coleman’s
- 1 pinch ground cinnamon
- THE SAUCE INGREDIENTS
- 8 ounces tomato sauce, 1 can
- 1 teaspoon hot sauce (i prefer frank’s), or to taste
- 4 ounces freshly brewed coffee
- 2 1/2 cups beef stock, not broth
- ADDITIONAL ITEMS
- salt, kosher variety, to taste
- white pepper, freshly ground, to taste

Step 1PREP/PREPARE

Step 2You will want a large skillet with tall sides, or a good pot to make this recipe.

Step 3This entire recipe relies on cooking at a low-and-slow temperature. Anything above a simmer is to high. The reason for this is that it gives the ingredients a bit of time to meld their flavors. As a matter of fact, assuming you can spare the time, if you allow it to cool down, stick it in the fridge, and then reheat it the next day, it tastes even better.

Step 4Gather your ingredients (mise en place).

Step 5Gently toss the meats together, taking care not to compress them.

Step 6Add the three meats to a skillet or pot over medium-low heat, cook for 15 – 20 minutes.

Step 7While the ground meats are slowly cooking, add the dry spices to a bowl and reserve.

Step 8When the ground meats are nice and browned, add the onions and garlic.

Step 9Combine and slowly simmer for 15 – 20 minutes.

Step 10Add the dry spices.

Step 11Combine with the ground meats and cook for 3 – 4 minutes.

Step 12Add the tomato and hot sauces and stir for about 2 – 3 minutes.

Step 13Add the beef stock and coffee, then stir to combine.

Step 14Turn the heat down to the lowest simmer you can manage, and let the sauce cook until reduces it by about half, and thickens, about 30 – 45 minutes.

Step 15While the sauce is simmering taste and add a bit of salt and pepper, to taste. But remember that the sauce is reducing, so the salt you add at the beginning will be more concentrated at the end… be careful with the salt.
