Took this to work one night for a potluck, too bad my crew didn't get any of it the managers of the other shift ate it before they left.

1 1/2 lb
ground beef or turkey
large green peppers-seeded and sliced
jalapeno pepper
2 can(s)
tomato sauce-the 26 or so ounce cans
3 can(s)
rotelle-spicy-or regular if you don't want it hot
1 1/2 lb
rice-i use minute rice
4 c
monterey jack cheese or colby jack cheese
garlic and onion powder-to your taste
crushed red peppers

1Brown meat in seasonings, drain well then add tomato sauce, tomato paste and Rotelle
2slice green peppers-I do it on my mandolin slicer in rounds but however you want to cut them just make sure they are fairly small.
3Cook rice as directed on package, drain then mix with meat and rotelle
4Dice the jalapeƱo pepper, mix with the rice and meat mix
5layer rice, peppers, cheese and continue to layer until crock pot is full. Top with cheese and set Crockpot to low.
6Let heat all the way through until the cheese melts then it is time to serve. Will sit for a long time-if you can keep people out of it.
