This is a simple and delicious stew that my family loves. Serve it with rolls or french bread for a wonderful dinner!

Ingredients

  • 2 pounds lean beef stew meat, cut in cubes
  • 1 can snap-e-tom or v-8 vegetable juice (8 oz)
  • 2 cups carrots, cut in chunks
  • 1 cup onion, chopped
  • 1 can diced tomatoes, 15 oz can, with juice
  • 2 stalks celery, chopped
  • 2 tablespoons instant tapioca
  • 1/2 cup water
  • 2 cups potatoes, cubed
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, finely chopped

How To Make crockpot beef stew

  • Step 1
    Place all ingredients in a crockpot sprayed with cooking spray. Stir well. Cook for 6 hours on low and avoid removing the lid until done.
  • Step 2
    Can be cooked on high for 4 hours as well.
