Ingredients
- 2 pounds lean beef stew meat, cut in cubes
- 1 can snap-e-tom or v-8 vegetable juice (8 oz)
- 2 cups carrots, cut in chunks
- 1 cup onion, chopped
- 1 can diced tomatoes, 15 oz can, with juice
- 2 stalks celery, chopped
- 2 tablespoons instant tapioca
- 1/2 cup water
- 2 cups potatoes, cubed
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, finely chopped
How To Make crockpot beef stew

Step 1Place all ingredients in a crockpot sprayed with cooking spray. Stir well. Cook for 6 hours on low and avoid removing the lid until done.

Step 2Can be cooked on high for 4 hours as well.
