With the exception of the cheese, this is a virtually fat free and sodium free dish. Love me some dilla's, but the sodium in the flour tortilla's don't love me. I really needed one today and didn't have time to try to make my own tortilla's with less sodium, so I pulled out my old friend the corn tortilla. I have to say it was delicious. I will be doing this again. Anything can be put into a quesadilla, but this is what I had on hand and used today.

  • - **unfried refried beans
  • - **cheese of choice

    I used leftover shredded beef that I had frozen, some leftover unfried refries and cheese. First I put the beef and beans in a skillet and heated it up. I removed them to a plate and placed a corn tortilla in hot skillet, added a little shredded cheese, the beef and bean mixture and a little more cheese. After about 2 min. I flipped the quesadilla and heated and browned the second side. What a delicious treat!!
