comfort essentials: creamy/dreamy round steak
This recipe started out as a Philly Cheesesteak then went to a Stroganoff, and finally evolved into whatever-this-is. Well, “whatever-this-is,” is a dreamy combination of round steak, shrooms, onions, and a few other bits-and-bobs. It makes one heck of a yummy meal, and it even tastes better the next day (a lot of recipes do). Total comfort food on a cold Winter’s eve. So, you ready… Let’s get into the kitchen.

- 2 tablespoons grapeseed oil, or other non-flavored variety
- 1/2 medium yellow onion, medium sliced
- 8 ounces mushrooms (your choice), stems removed, medium sliced
- 1 1/2 pounds boneless beef top round steak, cut into medium strips
- 1 tablespoon flour, all-purpose variety
- 1/2 teaspoon dried oregano
- 1/4 teaspoon white pepper
- 1/8 teaspoon garlic powder
- 1 - 2 pinches cayenne pepper, or crushed red pepper flakes, to taste
- 3 cups gravy, more on this later

Step 2What will you need? This is a one-pot meal, so you will need a good pot with a lid. A Dutch oven would be ideal.

Step 3What is it? This is real comfort food made with simple ingredients and tastes awesome. You can choose another cut of beef, if you like, but you may need to adjust the cooking time to make it fork tender.

Step 4What to serve with it? This recipe was born to be served over a steaming plate of mash taters, but that is just me. A small side salad, and some crusty bread would also be a good thing. As for wine... A nice crisp chardonnay :-) Some would prefer a red with beef, like a cabernet sauvignon, , but I am not much into reds.

Step 5How to store it? This recipe will survive in the fridge, properly covered for 5 – 7 days. However, it can be frozen, in which case it will last for 3 – 4 months. If vacuum sealed and frozen, it will last for 12 – 14 months.

Step 7Gather your ingredients (mise en place).

Step 8Slice up the onion and mushrooms

Step 9Add the oil to a pot over medium heat. When the pot warms up, add the onions.

Step 10Stir for about 2 – 3 minutes, and then add the mushrooms.

Step 11Reduce the heat to medium low, then stir the onions until they soften, and the mushrooms release their liquid and begin to brown, about 12 – 15 minutes.

Step 12Sprinkle the flour over the mushroom/onion mixture, and add the oregano, white pepper, garlic powder, and cayenne.

Step 13Stir for about 2 minutes.

Step 14Add the gravy and bring up to a simmer.

Step 15Add the round steak and stir to combine. Then cover and allow to slowly simmer. Open the lid and stir about every 15 minutes.

Step 16Simmer until the beef is fork tender, about 90 minutes.
