Healthy and good, this recipe is only 375 calories per serving. Tasty while helping my household to eat just a bit more healthy. What is not to like in this dish?

Ingredients

  • 1 pound lean ground beef
  • 1 can (8 oz) tomato sauce
  • 1 can (10 oz) diced tomatoes with mild chilies
  • 1 can red kidney beans, drained and rinsed
  • 1 1/2 tablespoons chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 6 medium zucchini
  • 1 cup shredded chedder cheese
  • - crushed tortilla chips for topping, if desired.

How To Make chili-cheese stuffed zucchini boats

  • Step 1
    Preheat oven to 350F. In a medium-size skillet over medium heat, brown ground beef, and drain. Add tomato sauce, tomatoes with their juice, beans and spices. Stir well, and let mixture simmer 5-7 minutes to let flavors meld.
  • Step 2
    Meanwhile, slice zucchini lengthwise, and scoop out the center using a teaspoon. Place zucchini boats on a baking sheet, and carefully spoon in the chili mixture. Top with cheese, and bake for 20 minutes.
  • Step 3
    Before serving, top with crushed tortilla chips if desired.
