Cheesy Potato Casserole

fresh hash brown potatoes (about 3-4 cups)
grated cheddar or monterey jack cheese
How to Make Cheesy Potato Casserole
1Preheat oven to 350°.
Brown ground beef and drain off fat. Season with salt and pepper.
2Spread potatoes on bottom of 8 x 12 baking dish. Cover with the sliced onion, tomato soup, and salt and pepper. Top with the browned beef.
3Bake 30-40 minutes, until potatoes are done. Top with the grated cheese, return to oven and bake 10-15 minutes longer until cheese is melted. Serve topped with ketchup and dill pickles if desired.
Also good with cooked bacon strips across top.
