cheesy potato casserole

I haven't made this in a long time - since the kids were young. I used to have to grate the potatoes myself; but today you can buy fresh pre-grated potatoes, and it saves on time.

Ingredients

  • 1 pound ground beef
  • 1 package fresh hash brown potatoes (about 3-4 cups)
  • 1 - onion, sliced
  • 1 can tomato soup
  • - salt and pepper
  • 2 cups grated cheddar or monterey jack cheese

How To Make cheesy potato casserole

  • Step 1
    Preheat oven to 350°. Brown ground beef and drain off fat. Season with salt and pepper.
  • Step 2
    Spread potatoes on bottom of 8 x 12 baking dish. Cover with the sliced onion, tomato soup, and salt and pepper. Top with the browned beef.
  • Step 3
    Bake 30-40 minutes, until potatoes are done. Top with the grated cheese, return to oven and bake 10-15 minutes longer until cheese is melted. Serve topped with ketchup and dill pickles if desired. Also good with cooked bacon strips across top.
