I was going thru some of my old recipes and came across this one that I used to make when I was on weight watchers.

Ingredients For cathy's meatloaf

  • 2 lb
    extra lean ground beef
  • 3/4 c
    oatmeal, uncooked
  • 1 sm
    onion, red or white
  • salt & pepper to taste
  • 1 c
    salsa (use your favorite kind)
  • 1 1/2 tsp
    taco seasoning mix -- or cumin to taste
  • 1 lg
    egg -- or 1/4 cup egg beaters

How To Make cathy's meatloaf

    Put all the ingredients in a large enough bowl. Mix it up with your hands, form into 2 loaves and bake at 350° for about 1 hour. Let stand 5 minutes before cutting/serving.

    VARIATION: use chopped garlic, instead of onions, & Italian seasonings instead of taco seasoning.
