candi's beef burritos

Just made these last night, another dish that knows how to play the dissapearing act on the table!!

Ingredients

  • 2 1/2 pounds ground beef
  • 1 medium diced onion
  • 1 medium aniheim pepper diced
  • 2 tablespoons diced fresh garlic
  • 1/2 - head lettuce shredded
  • 4 cups diy mexican cheese blend
  • 1 can black olives (undrained)
  • 1 large tomato (diced)
  • 4 tablespoons homemade taco seasoning
  • 8 medium tortillas (warmed)
  • 2 tablespoons olive oil

How To Make candi's beef burritos

  • Step 1
    Fry ground beef in large heavy skillet until just about done (leave a little pink). Rinse in strainer with hot water set aside to drain completely. Fry garlic, onion and pepper in olive oil until tender (about 10 min).
  • Step 2
    Add beef to pan, add all juice from your can of olives and 4 tblsp of taco seasoning at this point, cook on med-low heat, stirring regularly so seasonings are distributed and evenly absorbed by meat. about 10 min. (meat mixture will still be a little juicy)Dice 1/2 the can of olives and stir in at this point, the rest of the olives will be sliced, turn heat off & set aside.
  • Step 3
    Add 4-6 heaping tablespoons of meat mixture to each warmed tortilla and roll to close, repeat with remaining tortilla and meat until 9x13 pan is full.
  • Step 4
    Cover finished tortillas with cheese and bake in 350* oven 10-15 minutes until cheeses are melted and burritos are heated through. While burritos are heating slice the other half of the can of olives, shred cheese, dice your tomato. Serve with shredded lettuce, diced tomatoes, diced onion and sliced olives.
