My niece, Marianne Lintner, gave this recipe to me many years ago and it has stood the test of time very well. A good hearty meal for a cold winter night.

Ingredients

  • 1 pkg
    (10 oz.) frozen broccoli, chopped
  • 1 lb
    ground beef
  • 2 c
    cheddar cheese, shredded
  • 1/4 c
    parmesan cheese
  • 1/3 c
    chopped onion
  • 2 c
    baking mix
  • 1/2 c
    cold water
  • 1 tsp
    salt
  • dash(es)
    pepper
  • 4
    eggs
  • 1/2 c
    milk

How to Make BROCCOLI BEEF SQUARES

Step-by-Step

  1. Drain the broccoli and set aside (do not cook).
  2. Cook beef and onion, drain. Add 1-1/2 cups of the cheddar cheese.
  3. Mix baking mix with water and remaining cheese until soft dough forms. Beat 20 strokes. Pat dough into a greased 13x9" baking dish, pressing 1/2" up the sides.
  4. Spread beef mixture over dough, sprinkle with broccoli. Mix remaining ingredients and pour over broccoli. Bake at 400 degrees for 25-30 minutes.
  5. Remove from oven and let sit for 5 minutes before serving.
