best meat loaf ever

This recipe comes from one of my favorite uncles who had a small fast food shop in the VFW Bowling Alley here in Houma. Unfortuantely Uncle Percy and the old bowling alley don't remain on this earth anymore. As a teenager I used to help out during Summer vacations. He would let me help him make his scrumptious meat loaf mix. This is his recipe for that special meat loaf that he made daily, and he used it to serve up the best meat loaf sandwich I have ever eaten. I make it today for my family, with a side of mashed potatoes and gravy. I have to admit though, that I love the leftovers for a good ole' meat loaf sandwich a day or two later. Hope you enjoy!

Ingredients
- 1 1/2 pounds ground sirloin
- 1/2 pound ground pork
- 1 pound ground veal
- 3/4 cup onion, minced
- 2 teaspoons salt
- 2 teaspoons cayenne pepper
- 1 teaspoon sage, dried
- 1 tablespoon dry mustard
- 2 tablespoons worcestershire sauce
- 1/2 cup old fashioned oat meal
- 1 cup warm milk
- 2 large eggs, beaten
- 1/2 cup catsup
- 1/2 cup grated parmesan cheese
- 1/2 cup seasoned bread crumbs
- 1 small can tomato sauce
How To Make best meat loaf ever

Step 1In a mixing bowl, soak oatmeal in warm milk 15 minutes. Add onion, salt, cayenne, sage, dry mustard, catsup, worcestershire sauce and eggs. Mix thouroughly until well blended.

Step 2Add all 3 meats to oatmeal mixture, mix well with a fork or hands, being careful not to over handle the meat. (overhandling will make your meatloaf have a tough texture).

Step 3form into a loaf, Sprinkle with 1/2 cup seasoned bread crumbs, drizzle with tomato sauce. Top with parmesean cheese. Bake at 350 degrees for 1 hour.
