My oldest daughter hated this casserole while growing up. She was so happy one day when this was the planned dinner and a friend invited her to their house for dinner. That mom made the same casserole that day for them!
I leave the hamburger off 1/2 the pan, and I eat the veggie version.
It is even better the second day, just heat in the oven, or wrap some in wax paper and heat in micro.

Ingredients

  • 1 lb
    browned hamburger
  • 1
    diced onion
  • 1
    diced green pepper
  • 16 oz
    frozen corn
  • 15 oz
    tomato sauce, diluted with 1/3 can water
  • ·
    salt & pepper
  • 2 c
    cooked quick rice

How to Make Best casserole ever

Step-by-Step

  1. spray 2 qt baking pan w/pam. put cooked rice on bottom layer, add frozen corn, then diced onion and green pepper, add salt and pepper. place browned hamburger over all, then cover with diluted tomato sauce. bake 40 minutes @ 325 covered with foil.
