Ingredients
- 2-3 pounds stew cubes
- 2 tablespoons butter
- 2 tablespoons canola oil
- 1/2 cup flour
- 3 - medium onions, sliced
- 2 packages (8 oz.) sliced fresh mushrooms
- 3 cups beef broth
- 2/3 cup sour cream
- - hot buttered noodles or white rice
- 1/4 cup chopped fresh parsley
How To Make beef stroganoff

Step 1In a large, deep skillet over medium heat, melt butter. Stir in onions and mushrooms; cook for 3 minutes; remove from pan and set aside.

Step 2add 2 Tbsp. vegetable oil to pot

Step 3Toss stew meat with flour until well coated. Add beef to the pot and cook until browned. Add a bit more oil if needed.

Step 4Stir in beef broth until smooth. Bring just to a boil then turn heat down to low.

Step 5Cover and simmer over low heat until meat is tender, about 40-50 minutes.

Step 6Remove pan from heat.

Step 7Mix sour cream with a bit of the hot broth until smooth, then stir gently into the pot.

Step 8To serve, ladle some of the stroganoff over hot egg noodles or rice and sprinkle with fresh parsley.
