Ingredients

  • 8 - tortillas
  • 2 tablespoons vegetable oil
  • 1 - clove garlic, minced
  • 1 - onion, thinly sliced
  • 2 - green or red peppers, sliced
  • 1 pound sirloin steak, thinly sliced
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1/2 tablespoon paprika
  • 1/2 teaspoon cumin
  • 1/2 tablespoon ground oregano
  • 1 tablespoon lime juice
  • 1 tablespoon jalapeno pepper, pickled and minced
  • - optional:
  • 1 package 4 cheese shredded cheese or cotija cheese if you can get it
  • 1 package cherry tomatoes, cut in half
  • 1 package sour cream

How To Make beef fajitas

  • Step 1
    Toppings for fajitas are a personal choice.
  • Step 2
    Suggestions: Salsa, chopped tomatoes, shredded cheddar cheese, guacamole, sour cream, shredded lettuce.
  • Step 3
    Variations: for chicken fajitas, omit beef and use 1 pound skinless, boneless chicken breasts, cut into thin strips.
  • Step 4
    Saute for 3 to 5 minutes or until no longer pink.
  • Step 5
    Directions: Wrap stacked tortillas in foil.
  • Step 6
    Bake at 350 for 5 minutes or until warm.
  • Step 7
    In large skillet, heat 1 tablespoon oil over medium-high heat.
  • Step 8
    Cook and stir garlic, onion and sweet pepper for 3 to 5 minutes or until tender.
  • Step 9
    Remove from pan.
  • Step 10
    Add remaining oil to skillet.
  • Step 11
    Brown beef, about 2 minutes.
  • Step 12
    Stir in chili powder,cumin,salt,paprika and oregano, lime juice, jalapeno peppers and cumin.
  • Step 13
    Return vegetables to skillet and heat through.
  • Step 14
    Spoon meat mixture onto center of each tortilla, top with desired toppings.
  • Step 15
    Fold up bottom edge, then roll up.
