beef essentials: ooey/gooey short rib sliders

This is one of the items I will be serving at our Labor Day party. They are ooey/gooey delicious. I made mine with smoked beef short ribs; however, you could experiment with other items, and make it your own. All I can say is that they are, so yummy. FYI: Do not forget to bring a lot of napkins. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 1 pound beef short ribs, cooked and shredded
  • 12 - slider buns, homemade or store bought
  • 3 - 4 tablespoons bbq sauce, homemade or store bought
  • 12 - 14 slices bread & butter pickles
  • 3 - 4 tablespoons parmesan cheese, grated
  • 3 - 4 slices colby or cheddar cheese
  • 2 tablespoons sweet butter, unsalted, melted
  • ADDITIONAL ITEMS
  • - a good coleslaw for serving
  • - white pepper, cayenne, or red pepper flakes, for a bit of heat
  • - lots and lots of napkins

How To Make beef essentials: ooey/gooey short rib sliders

  • Step 1
    PREP/PREPARE
  • Step 2
    I am using beef short ribs that I smoked for 16 hours. There are a lot of ways that you can smoke beef… or you could just bake them in the oven, and shred the beef after they cook. As a matter of fact, you can buy shredded beef from you grocer, or a local BBQ restaurant. It is up to you.

    Here is what my short ribs looked like, after they came out of the smoker.

    Gather your Ingredients (mise en place).
  • Step 6
    Place a rack in the middle position, and preheat the oven to 300f (150c).
  • Step 7
    Slice the buns in half.
  • Step 8
    Chef’s Tip: Since the bottom of the buns are going to have to hold the sauce, make them a bit thicker than the top.

    Chef’s Note: These buns came as a group, so I kept them together, and sliced through the middle. After they cook, I will cut them up for serving.

    Slather the bottom buns, and then add the pickles. As you can see, I like my sliders sloppy.

    Add the parmesan cheese.
  • Step 12
    Chef’s Note: If you are going to add any additional spices, do it now.
  • Step 13
    Add the colby or cheddar cheese.
  • Step 14
    Add the tops, and then brush with the melted butter.
  • Step 15
    Add to a baking dish, and cover with foil.
  • Step 16
    Place into the preheated oven, and bake until they are warmed through, and the cheese is melted and gooey, about 30 minutes.

    PLATE/PRESENT
  • So yummy

    Slice, and serve while nice and warm, with some coleslaw or other items on the side. Enjoy.
