beef essentials: beef tips
The other day I made about 20 dinners featuring this recipe for my clients. Some were with tatters, some with rice, and others with egg noodles. I was so swamped that I did not have time to take my usual photos… my bad. Anyway, this is a really good way to make beef tips, they are tender and tasty. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 2 tablespoons grapeseed oil, or other non-flavored variety
- 1 tablespoon sweet butter, unsalted
- 1 medium yellow onion, chopped
- 1 clove garlic, minced
- 2 pounds chuck roast cut into bite-size cubes
- 2 cups beef stock, not broth
- 3 tablespoons tamari sauce, or liquid aminos
- 3 tablespoons worcestershire sauce
- 1 tablespoon flour, all-purpose variety
- 1 cup brown gravy
- SEASONINGS, TO TASTE
- white pepper, freshly ground
- salt, kosher variety, fine grind
- hungarian paprika, sweet or hot, your choice
- cayenne pepper

Step 4Gather your ingredients (mise en place).

Step 5Add the oil and butter to a skillet over medium heat. When the butter melts, give the pan a swirl and add the chopped onions. Cook until translucent and soft, about 3 – 4 minutes. Add the garlic and mix with the onions until fragrant, about 60 seconds. Add the beef, and cook, browning on all sides, about a minute or so on each side. Add the stock, Worcestershire and tamari or liquid aminos. Bring up to a boil and then reduce to a simmer. Cover and simmer for about 2 hours. Whisk the flour into the brown gravy, add it to the skillet, and simmer until it thickens, about an additional 15 minutes. While it is simmering add seasonings, to taste.
