beef essentials: bacon and tomato roast
I assembled this tonight for myself and a friend. It is enough for two with leftovers for tomorrow. Not much work involved; just put it together and wait while it cooks in the oven. My suggestion is to relax and have a glass of wine or two… or three. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 2 pounds eye of round roast
- 2 slices bacon
- 14 ounces diced tomatoes, 1 can
- 1 cup beef stock, not broth
- 1/4 cup red wine, dry variety
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- 1 teaspoon dried thyme
- 1 - 2 pinches cayenne pepper
- salt, kosher variety, to taste
- white pepper, freshly ground, to taste
- flour, all-purpose variety, for dusting
- ADDITIONAL ITEMS
- carrots
- potatoes
- celery
- garlic
How To Make beef essentials: bacon and tomato roast

Step 1PREP/PREPARE

Step 2You will need an oven-proof pot with a tight-fitting lid.

Step 3Gather your ingredients (mise en place).

Step 4Place a rack in the lower position and preheat the oven to 300f (150c).

Step 5Add the tomatoes and the dry spices to a pot over medium heat and allow to simmer for 3 – 5 minutes.

Step 6Add the beef stock, and wine, then continue to simmer for an additional 2 minutes.

Step 7Meanwhile, salt and pepper the roast, and dust with some flour.

Step 8Add to the pot and bring back up to the simmer.

Step 9Place the bacon over the top of the roast and place into the preheated oven for 2 hours.

Step 10After 2 hours add the veggies… your choice.

Step 11Put the lid back on and bake for an additional 2 hours.

Step 12PLATE/PRESENT

Step 13Remove from the oven and serve, while nice and hot, with the veggies and sauce. Enjoy.
