This is my youngest daughter's absolute favorite baked bean casserole. It is a really good recipe and ever so easy to make. I use Vegetarian Baked Beans and Turkey Strips instead of pork and beans or pork bacon so it is healthier for you.

Ingredients For beef, bacon, & bean dinner

  • 1 lb
    lean ground beef (no more than 10% fat)
  • 1 can
    28 ounce, vegetarian baked beans
  • 1 can
    14.5 ounces diced tomatoes, drained
  • salt and pepper to taste (optional)
  • 1 lg
    vidalia or sweet type onion, sliced
  • 7 slice
    oscar mayer® turkey bacon
  • 1/2 c
    brown sugar (not packed)/ (or to taste)

How To Make beef, bacon, & bean dinner

    Saute beef lightly, draining excess fat away. Add beans, salt & pepper, and drained tomatoes.

    Spread half of beef mixture in bottom of 2 quart casserole dish. Cover with sliced onions, then add remainder of beef mixture.

    Arrange turkey bacon slices over the top and sprinkle a thin layer of brown sugar over all. Bake at 350 degrees covered for 45 minutes. Then uncover and continue baking for 15 more minutes. (1 hour total baking time)

    Note: I use Oscar Mayer Turkey® Bacon because to me it tastes better than any other brand out there. But if you prefer another brand use it.
