Beef, Bacon, & Bean Dinner

Virginia (Ginger) Dean

This is my youngest daughter's absolute favorite baked bean casserole. It is a really good recipe and ever so easy to make. I use Vegetarian Baked Beans and Turkey Strips instead of pork and beans or pork bacon so it is healthier for you.

1 lb
lean ground beef (no more than 10% fat)
1 can(s)
28 ounce, vegetarian baked beans
1 can(s)
14.5 ounces diced tomatoes, drained
salt and pepper to taste (optional)
1 large
vidalia or sweet type onion, sliced
7 slice
oscar mayer® turkey bacon
1/2 c
brown sugar (not packed)/ (or to taste)

1Saute beef lightly, draining excess fat away. Add beans, salt & pepper, and drained tomatoes.
2Spread half of beef mixture in bottom of 2 quart casserole dish. Cover with sliced onions, then add remainder of beef mixture.
3Arrange turkey bacon slices over the top and sprinkle a thin layer of brown sugar over all.
Bake at 350 degrees covered for 45 minutes. Then uncover and continue baking for 15 more minutes. (1 hour total baking time)
4Note: I use Oscar Mayer Turkey® Bacon because to me it tastes better than any other brand out there. But if you prefer another brand use it.
