My grandmother had Type 1 Diabetes and always had to watch what she ate. During the summers I would visit, I always asked for this dish and ate my weight in it. I could not get enough of it and at the time, I was not too keen on veggies so it worked for both of us. I don't even know if anyone will be impressed with it as it's so totally "simple" and basic. But I love it and at times will add extra veggies in it. My husband will add extra spice too. It's definitely something to put together on a cool evening.

Ingredients

  • 1 pound dry pinto beans
  • 2 teaspoons salt
  • 2 tablespoons vegetable oil
  • 1 pound ground beef
  • 1 package onion soup mix
  • 1 small can tomato sauce
  • 1 tablespoon chili powder
  • 1/4 teaspoon black pepper
  • 1 small garlic clove, chopped

How To Make beans and ground meat

  • Step 1
    Soak beans overnight. The next morning put them in a pot with 3 quarts of water and salt and turn on to get a nice slow boil.
  • Step 2
    Meanwhile, brown the meat in the oil and then add all the other remaining ingredients with the meat. Add the meat mixture to the beans. Cook for 2 hours or until the beans are tender.
