bacon wrapped jalepeno stuffed with cheese burgers
I made these monsters for the Bud and Burger competition. We especially loved the stuffed jalepenos wrapped in bacon with the sauce, definately making these again as appetizer. The burger itself was way too big for my MIL and me, we cut it in half.

Ingredients
- 18 large jalepeno, each around 2 1/2 to 3 inches long
- 4 ounces cream cheese,room temperature
- 3 ounces quesadilla cheese, grated
- 3 ounces pepper jack, diced
- 1 tablespoon finely chopped onion
- 1 ounce 4 cheese mexican cheese blend, shredded
- 3/4 ounce chopped chipolte in adobe, chopped
- 1 tablespoon juice from adobe can
- 24 ounces ground beef
- 6 ounces ground chorizo
- 6 slices onion
- 6 slices tomato
- 6 large romaine leaves
- 6 ounces slices quesadilla cheese
- cup dressing
- 11/3 cups mayonnaise
- 1 tablespoon chcopped chipolte in adobo
- 1 tablespoon adobo juice
- 1/3 cup sour cream
- 1 tablespoon cilantro paste
- - salt and pepper to liking for burgers
- 6 - crusty burger buns, we like whole wheat
How To Make bacon wrapped jalepeno stuffed with cheese burgers

Step 1In a large bowl with an electric mixer combine the cream cheese, quesadilla, pepperjack, onion, mexicheese, chopped chipolte and sauce. Cover and chill

Step 2Combine the ground beef and chorizo and form into 6 patties Season with salt and pepper

Step 3Char the jalepenos either in oven under broiler or grill. Put in a glass bowl and cover with saran wrap to steam at least 20 minutes.

Step 4Remove the charred skin. Cut enough of the side of jalepenos to stuff them and then cover with piece you have cut out. Wrap completely with bacon to cover cheese.

Step 5Preheat grill to medium high and grill the burgers about 5 minutes per side, or to your likeness. Put Quesadilla slices on each burger last 5 minutes of cooking.

Step 6While the burgers are grilling grill the bacon wrapped jalepenos at the same time. I found that it takes the jalepenos a little more time to cook than the burgers.

Step 7Toast the buns the last few minutes of cooking

Step 8Assemble with bottom bun, burger, onion, tomato, stuffed jalepeno (use 3) lettuce, generous amount of dressing on the top bun and cover.
