This is an excellent recipe for all those upcoming Autumn days where the days are short, the nights are long, and the temperature begins dropping. You can vary the spices and veggies to suit your own tastes and serve it large bowls with plenty of fresh-baked crusty bread on the side. Ingredients
- PLAN/PURCHASE
- 1 tablespoon flour, all-purpose variety
- 1 pound ground beef, 80/20
- 1/2 medium yellow onion, grated
- 2 cloves garlic, minced
- 28 ounces diced tomatoes, 1 can with juice
- 4 medium carrots, thickly sliced
- 4 celery ribs, thickly sliced
- 1/2 cup peas, fresh or frozen
- 2 medium potatoes, cubed, peeled or not
- 2 cups beef stock, not broth
- 1 tablespoon tomato paste
- DRY SPICE MIX
- 1 tablespoon dried oregano
- 1 teaspoon dried parsley
- 1/2 teaspoon dried rosemary, crushed
- 1/2 teaspoon dried thyme
- 1 - 2 pinches cayenne pepper
- salt, kosher variety, to taste
- black pepper, freshly ground, to taste

Step 2You can make this recipe in a single pot. I would suggest a good soup pot with a lid, like a Dutch oven.

Step 3Gather your ingredients (mise en place).

Step 4Add the hamburger, onions, garlic, and tomato paste in a pot over medium heat, sprinkle on the flour and cook until the meat browns.

Step 5If the meat is greasy drain before proceeding to the next step.

Step 6Add all of the remaining ingredients, mix, then bring up to a boil and reduce the heat to a simmer.

Step 7Cover until the veggies begin to soften, about 20 – 30 minutes.

Step 8Uncover and simmer until the stew begins to thicken, about an additional 20 minutes.

Step 9While the soup is simmering, taste for proper seasoning.
