asian meatloaf with peanut butter sauce
This is a very moist and tasty recipe- a change from the ordinary meatloaf- you are used too.. The peanut butter sauce is a wonderful addition to this recipe. I hope you try it soon! I have also make this with apricot jam and glaze, real good-leave out the peanut butter if you use the jam. Recipe tweaked by me, to my family's liking.

Ingredients
- LOAF
- 2 pounds ground turkey
- 1 cup plain bread crumbs
- 8 ounces can crushed pineapple, drained, reserve juice
- 1/2 cup each chopped onion and red or green bell peppers
- 1/4 cup diced celery
- 2 large eggs, beaten
- 1/4 cup evaporated milk
- 1/4 cup soy sauce
- 1 tablespoon finely minced fresh ginger
- 1/2 teaspoon black pepper
- SAUCE
- 1/2 cup orange juice and reserved pineapple juice to make 1/2 cup
- 1/2 cup soy sauce
- 1/2 cup creamy peanut butter or nutty
- 2 tablespoons rice wine vinegar
- 2 tablespoons heaping brown sugar
- 1/2 teaspoon minced fresh ginger
- 1 teaspoon minced garlic

Step 1Preheat oven to 350^; Spray a loaf pan with non-stick vegetable spray. Set aside. LOAF: Combine all ingredients in a large bowl, mixing well to blend all the ingredients. Place in prepared loaf pan. Bake for about 45 minutes, remove from oven and spread about 1/4 of a cup of the sauce or a little more and bake for 10 minutes more. Serve remaining sauce at the table.

Step 2SAUCE Bring all ingredients to a boil; stirring constantly,lower heat and cook until thickened. Pour 1/4 cup over meatloaf 10 minutes before end of loafs cooking time. Serve remainder at the table. So Good-Enjoy!
