a very yummy baked meatball with a twist!

Been trying to make healthy recipes and substitute things for high cholesterol eggs and in this recipe I substituted roasted pumpkin with some nutmeg to bring out the flavor. It was a huge hit and my youngest son loved them which by the way is amazing since he always tells me he hates pumpkin anything! So shhhh don't tell him!

Ingredients

  • 1/2 pound lean ground turkey sausage
  • 1/2 pound lean ground beef
  • 1/4 cup roasted pumpkin puree
  • 1/2 cup fat free bread crumbs
  • 1/2 cup parmesan cheese, fat-free
  • - freshly ground pepper

How To Make a very yummy baked meatball with a twist!

  • Step 1
    Crumble the turkey and lean beef into a large bowl, add the remaining ingredients and mix well by hand! Hint spray your hands with a little cooking spray to mold the meatballs. This makes 18 nice size meatballs.
  • Step 2
    In a preheated oven at 350° bake the meatballs on a wire rack set on a cookie sheet lined with parchment paper. Bake for 15 to 20 minutes or until golden.
  • Step 3
    Put the meatballs in your favorite spaghetti sauce and serve over your choice of noodles or better yet spaghetti squash is what we did. You could also eat them as is and serve as an appetizer. So many options with these little gems.
