teriyaki chicken

In an effort to eat healthier, I came up with this recipe. You can top rice with this or eat it without. Either way it is tasty!

Ingredients

  • 2 cups cooked chicken
  • 1 medium onion, sliced
  • 1 1/2 medium any color pepper, sliced
  • 2 medium celery stalks, cut in medium pieces
  • 10 - baby carrots
  • 1 cup sliced mushrooms
  • 1 medium bag of frozen broccoli
  • 1/4 cup soy sauce
  • 1 cup bbq sauce
  • 3 teaspoons rice vinegar
  • 1/4 cup olive or sesame oil
  • 1 tablespoon garlic
  • 1 each pinch salt and pepper
  • To Taste pinch hot pepper sirracha
  • 1 tablespoon cornstarch

How To Make teriyaki chicken

  • Step 1
    While the broccoli is cooking in the microwave, heat the oil in a large skillet and add the chopped vegetables. Saute until glistening. Cut up the chicken and add to the vegetables. Saute further for 5 minutes. Add the garlic, salt and pepper. Drain the broccoli and add to the chicken vegetable mixture. Stir. Combine the bbq sauce, rice vinegar, and soy sauce. Add the cornstarch to the mixture, set aside for 5 minutes. Pour the bbq mixture over the chicken and vegetables. Stir to coat. Turn up the heat to boil and thicken the sauce. Add the pepper sauce to taste. Be careful! Sirracha can be very hot! Serve over rice or alone, enjoy!
