Found this recipe in an old cookbook of my moms..hope you all enjoy!!

Ingredients

  • 4 - boneless skinless chicken breast
  • 1 teaspoon salt
  • 1 package frozen green beans
  • 1 cup diced celery
  • 1 can about 1lb bean sprouts(drained of water)
  • 3 tablespoons apple cider vinegar
  • 1/4 teaspoon pepper
  • 2 tablespoons cornstarch
  • 3 tablespoons soy sauce
  • 2 medium tomatoes cut into wedges
  • 3 cups hot cooked rice
  • 3/4 cup water

How To Make oriental chicken and veggies

  • Step 1
    cut chicken into 1/4 inch strips
  • Step 2
    sprinkle salt in a large frying pan. Add chicken and saute stirring often 10 minutes push to one side
  • Step 3
    place frozen beans in frying pan cook breakin beans apart as they thaw 5 mins stir in celery,bean sprouts,3/4 cup of water, vinegar and pepper heat to boil cover and simmer 5 mins.
  • Step 4
    Blend cornstarch with 2 tablespoons water until smooth in a cup stir in soy sauce stir into mixture in frying pan. cook stirring constantly. until mixture thickens and boils 3 mins. lay tomato wedges on top cover again. steam 5 mins or just until tomatoes are heated through.
  • Step 5
    Spoon a ring of rice around the edge of each 6 heated plates spoon chicken mixture in middle place tomato wedges on top
  • Step 6
    makes 6 servings 293 calories each enjoy :-)
