From a co-worker, and it's just quick and delicious. No dipping sauce needed. I have found that it's best made fresh. Making the filling in advance and reheating even later the same day is not quite as good. Turkey could be cooked in advance, however.

Ingredients

  • 1 1/2 pounds ground turkey
  • 1/4 cup green onion, chopped
  • 3 tablespoons minced fresh cilantro
  • 2 tablespoons soy sauce
  • 3 tablespoons creamy peanut butter (or chunky and omit the peanuts at end of recipes)
  • 2 teaspoons red chili paste (gourmet garden brand in a tube)
  • 2 cloves garlic, crushed
  • 1 teaspoon sugar
  • 1/2 teaspoon red pepper flakes

How To Make lettuce wraps

  • Step 1
    Cook & drain the ground turkey. Add the remaining ingredients.
  • Step 2
    Cook the above together 3-4 minutes until heated through and mixed together.
  • Step 3
    Serve atop iceberg lettuce leaves with shredded carrots (1 cup) and chopped peanuts (1/4 cup).
  • Step 4
    No dipping sauce is needed; perfect balance of flavors and it’s easy to make it spicier or less spicy, as you prefer. This makes a nice appetizer for 6-8 people or can be used as a main course for 2-4 people.
