The Lazy cook likes making a meal like this. Quick, easy and they'll all eat it. I made it tonite for a quick dinner, served with some roasted peppers. Even the meat eater likes it....

Cheap eats, quick, tasty and light. My kind of meal.

Ingredients

  • 1/2
    zucchini
  • 1/2
    carrot
  • 1 14 oz. pkg
    udon noodles with soup base (2 serving size)
  • 1
    egg
  • ·
    green onions
  • 1-2 Tbsp
    oil

How to Make Fried Udon

Step-by-Step

  1. Julienne zucchini and carrot.
  2. Boil Udon noodles according to package directions, minus 1 minute cook time. Drain and set aside.
  3. Scramble the egg and fry it.
  4. Add oil to pan and heat on medium. Add carrots and zucchinis. Throw noodles on top. Sprinkle soup base for flavor (it doesn't take much).
  5. Slice the scrambled eggs and add the green onions for garnish.

    Serve hot. yum!
