The Lazy cook likes making a meal like this. Quick, easy and they'll all eat it. I made it tonite for a quick dinner, served with some roasted peppers. Even the meat eater likes it....

Cheap eats, quick, tasty and light. My kind of meal.

Ingredients

zucchini
1/2
carrot
1 14 oz. pkg
udon noodles with soup base (2 serving size)
1
egg
green onions
1-2 Tbsp
oil

How to Make Fried Udon

Step-by-Step

  • 1Julienne zucchini and carrot.
  • 2Boil Udon noodles according to package directions, minus 1 minute cook time. Drain and set aside.
  • 3Scramble the egg and fry it.
  • 4Add oil to pan and heat on medium. Add carrots and zucchinis. Throw noodles on top. Sprinkle soup base for flavor (it doesn't take much).
  • 5Slice the scrambled eggs and add the green onions for garnish.

    Serve hot. yum!
