The Lazy cook likes making a meal like this. Quick, easy and they'll all eat it. I made it tonite for a quick dinner, served with some roasted peppers. Even the meat eater likes it....

Ingredients

1/2zucchini
-
1/2carrot
-
1 14 oz. pkgudon noodles with soup base (2 serving size)

1egg
-
·green onions
-
1-2 Tbspoil
How to Make Fried Udon
- Julienne zucchini and carrot.
- Boil Udon noodles according to package directions, minus 1 minute cook time. Drain and set aside.
- Scramble the egg and fry it.
- Add oil to pan and heat on medium. Add carrots and zucchinis. Throw noodles on top. Sprinkle soup base for flavor (it doesn't take much).
- Slice the scrambled eggs and add the green onions for garnish.
Serve hot. yum!
