The Lazy cook likes making a meal like this. Quick, easy and they'll all eat it. I made it tonite for a quick dinner, served with some roasted peppers. Even the meat eater likes it.... Cheap eats, quick, tasty and light. My kind of meal.

Ingredients

  • 1/2 - zucchini
  • 1/2 - carrot
  • 1 14 oz. packages udon noodles with soup base (2 serving size)
  • 1 - egg
  • - green onions
  • 1-2 tablespoon oil

How To Make fried udon

  • Step 1
    Julienne zucchini and carrot.
  • Step 2
    Boil Udon noodles according to package directions, minus 1 minute cook time. Drain and set aside.
  • Step 3
    Scramble the egg and fry it.
  • Step 4
    Add oil to pan and heat on medium. Add carrots and zucchinis. Throw noodles on top. Sprinkle soup base for flavor (it doesn't take much).
  • Step 5
    Slice the scrambled eggs and add the green onions for garnish. Serve hot. yum!
