The Lazy cook likes making a meal like this. Quick, easy and they'll all eat it. I made it tonite for a quick dinner, served with some roasted peppers. Even the meat eater likes it....

Cheap eats, quick, tasty and light. My kind of meal.

Ingredients

1/2
zucchini
1/2
carrot
1 14 oz. pkg
udon noodles with soup base (2 serving size)
1
egg
green onions
1-2 Tbsp
oil

Step-By-Step

1Julienne zucchini and carrot.
2Boil Udon noodles according to package directions, minus 1 minute cook time. Drain and set aside.
3Scramble the egg and fry it.
4Add oil to pan and heat on medium. Add carrots and zucchinis. Throw noodles on top. Sprinkle soup base for flavor (it doesn't take much).
5Slice the scrambled eggs and add the green onions for garnish.

Serve hot. yum!
