Ingredients

  • 1 cup uncooked jasmine rice
  • 1 cup water
  • 1 cup canned unsweetened coconut milk
  • 1 teaspoon salt
  • 2 tablespoons shredded coconut (sweetened or unsweetened)
  • - fresh or dried cilantro (optional)

How To Make coconut jasmine rice

  • Step 1
    Combine the rice, water, coconut milk, and salt in a small pot over high heat. Bring to a boil, then turn temp down to low. Simmer for 20 minutes, until the liquid is absorbed.
  • Step 2
    Remove from the heat and stir in the coconut. Fluff with fork and add cilantro, if you'd like.
