Ingredients

1 c
uncooked jasmine rice
1 c
water
1 c
canned unsweetened coconut milk
1 tsp
salt
2 Tbsp
shredded coconut (sweetened or unsweetened)
fresh or dried cilantro (optional)

How to Make Coconut Jasmine Rice

Step-by-Step

  • 1Combine the rice, water, coconut milk, and salt in a small pot over high heat. Bring to a boil, then turn temp down to low. Simmer for 20 minutes, until the liquid is absorbed.
  • 2Remove from the heat and stir in the coconut. Fluff with fork and add cilantro, if you'd like.
