Ingredients
- 1 cup uncooked jasmine rice
- 1 cup water
- 1 cup canned unsweetened coconut milk
- 1 teaspoon salt
- 2 tablespoons shredded coconut (sweetened or unsweetened)
- - fresh or dried cilantro (optional)
How To Make coconut jasmine rice

Step 1Combine the rice, water, coconut milk, and salt in a small pot over high heat. Bring to a boil, then turn temp down to low. Simmer for 20 minutes, until the liquid is absorbed.

Step 2Remove from the heat and stir in the coconut. Fluff with fork and add cilantro, if you'd like.
