    uncooked jasmine rice
  • 1 c
  • 1 c
    canned unsweetened coconut milk
  • 1 tsp
  • 2 Tbsp
    shredded coconut (sweetened or unsweetened)
  • ·
    fresh or dried cilantro (optional)

How to Make Coconut Jasmine Rice


  1. Combine the rice, water, coconut milk, and salt in a small pot over high heat. Bring to a boil, then turn temp down to low. Simmer for 20 minutes, until the liquid is absorbed.
  2. Remove from the heat and stir in the coconut. Fluff with fork and add cilantro, if you'd like.
