  • 1 c
    chole (chickpeas) [soaked in sufficient water overnight]
  • 2 Tbsp
    onion chopped
  • 1/2 c
    tomato puree
  • 1 tsp
    ginger paste
  • 1 Tbsp
    chana masala
  • 1
    bay leaf
  • 1/2 tsp
    green chilli, chopped
  • 1 tsp
    red chilli powder
  • 1/4 tsp
    cinnamon powder
  • 1/4 tsp
    cardomom powder [optional]
  • 2 Tbsp

    salt to taste
  • 1
    teabag [optional]

How to Make Chole / Chana masala (chickpeas Punjabi style)


  1. Cook chikpeas with sufficient water (2 - 2.5 cups) with cinnamon, cardomom, little salt and pinch of baking soda till very soft. Traditionally people use a tea bag while cooking chole to give it a dark colour.
  2. Heat oil in a wok, add bay leaf and onion. Saute onion in medium heat till light brown, add tomato puree and cook till oil separetes. Add chole / chana masala and cook for 1/2 a minute. Add cooked chickpeas, salt, ginger, 1/2 cup water and red chilli powder. Cook for about 10-15 minutes till the gravy is thick. Adjust the gravy consistency as per your taste.
  3. serve with fresh coriander and onion.
