chole / chana masala (chickpeas punjabi style)

'Chole Bhture' is a dish synonymous with the Punjabi community in India and is being loved by the entire Indian people. It's a one of the most popular dishes and is available in every Indian restaurant. I have provided the 'Chole' preparation here.

Ingredients

  • 1 cup chole (chickpeas) [soaked in sufficient water overnight]
  • 2 tablespoons onion chopped
  • 1/2 cup tomato puree
  • 1 teaspoon ginger paste
  • 1 tablespoon chana masala
  • 1 - bay leaf
  • 1/2 teaspoon green chilli, chopped
  • 1 teaspoon red chilli powder
  • 1/4 teaspoon cinnamon powder
  • 1/4 teaspoon cardomom powder [optional]
  • 2 tablespoons oil
  • - salt to taste
  • 1 - teabag [optional]

How To Make chole / chana masala (chickpeas punjabi style)

  • Step 1
    Cook chikpeas with sufficient water (2 - 2.5 cups) with cinnamon, cardomom, little salt and pinch of baking soda till very soft. Traditionally people use a tea bag while cooking chole to give it a dark colour.
  • Step 2
    Heat oil in a wok, add bay leaf and onion. Saute onion in medium heat till light brown, add tomato puree and cook till oil separetes. Add chole / chana masala and cook for 1/2 a minute. Add cooked chickpeas, salt, ginger, 1/2 cup water and red chilli powder. Cook for about 10-15 minutes till the gravy is thick. Adjust the gravy consistency as per your taste.
  • Step 3
    serve with fresh coriander and onion.
