Created this recipe while looking in the cupboard for something to make for supper. Kinda of took a basic stir fry recipe and reworked it.

Ingredients For albacore tuna stir-fry

12 oztuna, packed in water (albacore solid tuna)

1 3/8 Tbspsoy sauce, low sodium

1lemon ( 2 tablespoons juice)

2 Tbspcanola oil

1/2 conions sliced

1/2 ccarrots sliced
-
1 cbroccoli florets
-
8 ozpea pods
-
3 stalkcelery sliced
-
pinchred pepper flakes
-
1/2 tspblack pepper
How To Make albacore tuna stir-fry

1In a small bowl add the tuna and flake with a fork.Squeeze half a lemon over tuna or 1 tablespoon of lemon juice and sprinkle with black pepper to taste. Toss to combine lemon juice and pepper with tuna.

2In another small bowl add soy sauce, 1 tablespoon of water and squeeze the other half of the lemon or 1 tablespoon of lemon juice into the soy sauce mixture, mix completely and set aside.

3Heat a fry pan with oil and crushed red pepper over medium high heat.Stir the oil to keep the pepper from burning.

4Once the oil is hot add the carrots stir fry 1 minutes, add celery and continue to cook for 2 more minutes, add pea pods, onion and broccoli stir fry for 4 more minutes.

5Add the tuna and sauce, stir fry for 1- 2 minutes till all the tuna is hot. Serve over rice.
