albacore tuna stir-fry

Created this recipe while looking in the cupboard for something to make for supper. Kinda of took a basic stir fry recipe and reworked it.

Ingredients
- 12 ounces tuna, packed in water (albacore solid tuna)
- 1 3/8 tablespoons soy sauce, low sodium
- 1 - lemon ( 2 tablespoons juice)
- 2 tablespoons canola oil
- 1/2 cup onions sliced
- 1/2 cup carrots sliced
- 1 cup broccoli florets
- 8 ounces pea pods
- 3 stalks celery sliced
- pinch red pepper flakes
- 1/2 teaspoon black pepper
How To Make albacore tuna stir-fry

Step 1In a small bowl add the tuna and flake with a fork.Squeeze half a lemon over tuna or 1 tablespoon of lemon juice and sprinkle with black pepper to taste. Toss to combine lemon juice and pepper with tuna.

Step 2In another small bowl add soy sauce, 1 tablespoon of water and squeeze the other half of the lemon or 1 tablespoon of lemon juice into the soy sauce mixture, mix completely and set aside.

Step 3Heat a fry pan with oil and crushed red pepper over medium high heat.Stir the oil to keep the pepper from burning.

Step 4Once the oil is hot add the carrots stir fry 1 minutes, add celery and continue to cook for 2 more minutes, add pea pods, onion and broccoli stir fry for 4 more minutes.

Step 5Add the tuna and sauce, stir fry for 1- 2 minutes till all the tuna is hot. Serve over rice.
