Ingredients
- 1 cup orange juice
- 1/3 cup soy sauce
- 1/4 cup firmly packed brown sugar
- 1 1/2 tablespoons cornstarch
- 3 tablespoons vegetable oil
- 3 pounds boneless, skinless chicken breasts cut into one nich cubes
- 2 tablespoons fresh grated orange rind
- 1 teaspoon ground ginger
- 1/4 teaspoon hot sauce
- 4 - scallions cut into 1/4 inch slices
- 1 can (8 oz) sliced water chestnuts, drained
- 2 - oranges peeled seeded and cut into pieces

Step 1Combine first 4 ingredients. Stir until sugar and cornstarch disolve. set aside

Step 2Pour oil into preheated wok and bring to medium high (325.)

Step 3add chicken and stir fry 2 minutes. Add grated orange rind, ginger and hot sauce - stir fry 2-3 minutes

Step 4add orange juice mixture, green onions and water chestnuts. Stir fry 3 minutes until thickened. Stir in ornage sections and stir until warm. Serve over hot rice.
